Turkey Sweet Potato and Spinach Skillet

Servings: 1

A balanced one-pan meal with lean turkey, sweet potato, colourful vegetables, and spinach. The measured ingredients make one substantial serving.

Ingredients (1 Serving)

  • 150 g raw lean ground turkey (about 5% fat)
  • 220 g sweet potato, peeled and cut into 2 cm cubes
  • 80 g red bell pepper, diced
  • 80 g fresh spinach
  • 50 g onion, diced
  • 1 teaspoon olive oil
  • 1 garlic clove, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Black pepper, a small pinch of salt, parsley, and a lime wedge

Preparation

  1. Microwave or steam the sweet potato cubes for 5–7 minutes until almost tender but still holding their shape.
  2. Heat the olive oil in a non-stick skillet over medium heat. Add the onion and bell pepper and cook for 3 minutes.
  3. Add the turkey, garlic, paprika, cumin, pepper, and salt. Break the turkey into small pieces and cook until browned and fully cooked, with no pink remaining.
  4. Add the sweet potato and cook for another 4–5 minutes, stirring gently, until lightly browned.
  5. Fold in the spinach and cook until wilted. Finish with parsley and lime.
